MONDAY
Lunch - Make-over Mexican Roll-ups, chips/salsa, grapes (I didn’t plan on running out of tortillas
).
Dinner - out with Grandaddy to our favorite BBQ place
TUESDAY
Lunch - I was planning on 15 min Red Beans and Rice, like we had here, but I forgot the Red Beans - as you might have guessed, they are essential to this dish
, so we had some leftovers instead!
Dinner - Leftover Buffet!
WEDNESDAY
Lunch - ham sandwiches, chips, apple slices (eaten in the car on the way home from preschool, so we can get an early nap in before ballet!)
Dinner - some of my potato/cabbage stew leftovers from the freezer, cornbread (which I poured into the wrong size dish and unintentionally made “cornbread crackers”
).
THURSDAY
Lunch - Kids Cuisine frozen entrees for the kids and leftovers for mom & dad
Dinner - Banquet Chicken & Red Potatoes crock pot kit (bought on sale AND with a coupon!), rolls, salad
FRIDAY
Lunch - kids had PB & J sandwiches with chips and grapes; dad & I had leftovers again
Dinner - Low Country Shrimp Boil, crab legs, shrimp cocktail, and popcorn shrimp to celebrate my sister and her husband being in town. We were a little disappointed with the flavor from the “shrimp-boil-in-a-bag” we purchased; my sister suggested we try “Old Bay” seasoning next time!
SATURDAY
Breakfast - bacon/cheese pull-aparts (one of our weekend faves - although I think hubby leaves out the onions and does extra everything else!) and Pull-Apart Coffee Cake (easy AND scrumptious!)
Lunch - belated Christmas meal with my sister - turkey and dressing, fresh asparagus, creamed corn, and salad
Dinner - Dijon Chicken Salad Sandwiches, specialty cheeses and crackers from my sister, grapes, sliced cukes, carrots, celery, chips
Brunch - hubby made his delicious Eggs Benedict, this yummy Canadian Bacon Quiche, and I made this (substituting blueberries from my freezer) - IT WAS FABULOUS!
Dinner - leftover crockpot chicken from Thursday and salad (kind-of a letdown from brunch, but I was still FULL!)

p.s. For those of you wondering what Valentine’s Dessert I finally decided to make, I got the kids involved and we made this instead of divinity!

Wonderfule recipes as usual! I’ll definitely be trying the Cream Cheese Coffee Cake.
